Carnosine is een dipeptide dat beta-alanine en histidine. Het wordt gevonden in spieren en andere weefsels. Het heeft sterke oxiderende eigenschappen omdat het zowel reactieve zuurstofsoorten (ROS) als reactieve stikstofsoorten (RNS) kan opruimen. Carnosine werkt als een cytosolische buffer en als regulator van de macrofaagfunctie.1 Door zijn vermogen om complexen te vormen met overgangsmetalen, wordt het gebruikt om het gehalte aan overgangsmetaalionen in biologische vloeistoffen en weefsels te reguleren.
